Chinese Sweet and Sour Pork

2 pounds lean pork, cut into strips
2 tablespoons vegetable oil
1/3 cup water
1 20-ounce can pineapple chunks
1/4 cup brown sugar
2 tablespoons cornstarch
1/2 teaspoon salt 

1/3 cup vinegar
1 tablespoon soy sauce
1 cup sliced mushrooms
1/2 cup green pepper slices or strips
1/2 cup sliced onion rings
1 cup sliced water chestnuts
1 tablespoon sesame seeds

Brown meat in oil and simmer in water until done. Drain pineapple, reserving liquid. Set pineapple aside. Mix together 1 cup reserved pineapple juice, brown sugar, cornstarch, salt, vinegar and soy sauce. Cook until clear and thickened. Pour over meat. Right before serving, stir in remaining ingredients. Serve over rice with additional soy sauce. Yield: 4-6 servings.
